Today I decided to make pancakes for Brunch. When my son and I got up this morning, we weren’t particularly hungry, but when we got home after walking the dog, boy, were we ready to eat!
So here is my easy-peasy, tried and tested pancake recipe.
- 1 1/2 cups of flour
- 2 sachets of baking powder (about 14g)
- 1 1/4 cups of milk (I use almond milk)
- 1 egg
- 1 tablespoon of sugar
- 1/2 teaspoon of salt
- 3 tablespoons of oil or butter (melted)
- cooking spray or oil
Pour the flour, sugar, salt and baking powder into a big bowl and whisk.
Add the milk and oil, then whisk.
Add the egg and whisk well until there are little air bubbles all over the dough.
Once the mixture is homogenous and little air bubbles appear, heat a griddle or a shallow pan with a little bit of oil or cooking spray.
Depending on the size of your pan, this may take time. I have a small pan so I can only cook one or two pancakes at a time. Use you judgement in terms of how big you want your pancakes to be, I make them about 3 or 4 inches in diameter, or about about the size of my hand.
You’ll know when the first side of your pancake is done when little air pockets appear, then it’s time to flip it over. Make sure you stay by your pancakes as they cook very quickly!
I love my pancakes with the traditional maple syrup! However, my family loves to add jam, sugar, or chocolate spread.
What can you eat them with? They’re lovely with a side of scrambled eggs, some fruit, and a good coffee!
The recipe above is a very simple one, but you can add chocolate chips, banana slices, or blueberries to make them even more delicious!

Pancakes are so simple and quick to make, there’s really no reason to buy pancake mix at the store, I swear this only took me 10 minutes to whip up and another 10 to cook when I made them this morning! Plus, many of us already have the ingredients at home.
